A dream project with room for personality - now recognized at the highest level

It is with great pride and deep gratitude that we can share the news that Restaurant Udtryk has been awarded its first Michelin star – just 41 days after opening.

This makes Udtryk the fastest starred restaurant in Nordic history.

Udtryk opened as a bold and personal project in the heart of Copenhagen – carried by Edward Lee’s experience, integrity and uncompromising approach to ingredients and taste.

From day one, the ambition has not been to follow dogma, but to create a restaurant where every night is unique and where the menu is shaped by the best ingredients of the day and a strong professional instinct.

The Michelin star is a great recognition of the work Edward and the entire team at Udtryk put into every detail – from kitchen to guest meeting.

It is also a milestone for us as a group. At Norrlyst Koncernen, we believe that honest gastronomy, attentive service and strong stories create the most meaningful experiences.

That philosophy is very much alive at Udtryk – and we are both proud and touched that it is now also recognized with a star.

We want to thank everyone who has been part of the journey:

Our dedicated employees, our skilled manufacturers and suppliers – and not least the guests who have shown us trust and curiosity.

The star is not a full stop – but a starting shot.

We look forward to continuing the work, development and storytelling – and to welcoming even more guests to Udtryk and the rest of our group.

But the star isn’t the only thing we’re celebrating this year.

In total, five of our restaurants have been recognized in the Michelin Guide this year – making Norrlyst Koncernen the restaurant group in Denmark with the most recommendations in the guide:

  • Restaurant Norrlyst has received its fourth Bib Gourmand
  • Gabrielle has been awarded her second Bib Gourmand
  • Theo has been recommended in the Michelin Guide for the third time
  • And Abigail has received her first recommendation in the guide

At Norrlyst Koncernen, we are proud that our diverse restaurants – from intimate and experimental to accessible and popular – all receive recognition at the highest level.

It confirms that great gastronomy is not about one particular form, but about consistency, love for the craft – and a strong focus on the guest experience.
