Guest visit to Norrlyst - Summer at Volden

During the summer, we will have a special visit to Norrlyst – Sommer på Volden.

Norrlyst invites some of Denmark’s most talented chefs to join the kitchen and create unique evening menus – free, intuitive and carried by friendship and a shared love of good ingredients.

Together, we develop new dishes across styles and experiences – always with respect for seasonal ingredients and the desire to create something that only exists right now.

The guest chef nights will be a bit more exclusive than our regular menu, with fewer seats and a one-off menu.

It’s all about creativity, presence and the unpredictable magic that happens when two chefs are given free rein.

On Sunday, August 10, we will be visited by Steffen Snitgaard from Fakkelgården - a restaurant with strong roots in Southern Jutland and French cuisine. Steffen is known for his ability to create flavorful dishes with precision and warmth.

In collaboration with Norrlyst's kitchen team, he creates a full evening menu where the season's best ingredients and shared professionalism meet in unique harmony. An evening just for this one time.

On Sunday August 17th, Daniel McBurnie from Lyst will be visiting our kitchen. Daniel heads one of the country's most visionary Michelin-starred restaurants and is known for his artistic approach to taste and aesthetics.

Together with Norrlyst, he creates a full evening experience focused on craftsmanship, immersion and creativity - a one-off menu.

On Sunday, August 31st, we will close Summer at Volden with a unique collaboration with Arla Unika. Their most refined cheeses and dairy products take center stage, which Norrlyst's kitchen team will interpret in a menu with 2 snacks and 5 courses - created exclusively for this evening. An experience for curious taste buds and cheese-loving guests - just this once.

On June 29, Norrlyst - Sommer på Volden will be visited by Sylvester Andersen, head chef at Sølyst - Den Kongelige Skydebane.

Sylvester is known for his uncompromising approach to seasonal ingredients, technical precision and experience from some of Denmark's most ambitious Michelin-starred kitchens.

Together with Norrlyst's kitchen team, he creates a menu consisting of 2 snacks, 4 courses and 2 desserts - a total of 8 servings, developed exclusively for this one evening. Two styles. One menu. A gastronomic experience that only happens once.

On Sunday, July 13, Søren Birch from Michelin-starred and Michelin Green Star restaurant Alimentum will visit our kitchen for a very special evening. Alimentum was awarded a Michelin star at this year's awards and we are proud of the collaboration.

Together with Norrlyst, he creates a menu consisting of 2 snacks and 6 courses - a complete gastronomic experience with a focus on sustainability, signature touches and the best seasonal ingredients. A unique dinner, created together - and only this one time.

Andreas Ring Kjeldsholm Hansen

On Sunday, July 20, Norrlyst - Sommer på Volden will be visited by Andreas Ring Kjeldsholm Hansen from Dragsholm Slot, who was recently awarded a Michelin Green Star at this year's award ceremony, while they already have a Michelin star. Dragsholm Slot is one of Denmark's leading gastronomic destinations, and Andreas has a strong professional background with experience from e.g. the 2-star Michelin restaurant Vollmers in Malmö. His style is characterized by Nordic elegance, precision and a deep understanding of nature's ingredients.

Together with Norrlyst's kitchen team, he creates a menu with 2 snacks and 6 courses - exclusively developed for this one evening. A taste journey where Scandinavian terroir and technical mastery meet.
